Have you ever made your own bone broth or stock (literally the same thing bone broth is just marketed better 🤣)??⁠

Literally all you need is leftover chicken bones, water, and apple cider vinegar. If you do have extra fragrant veggies or herbs like onions, celery, garlic, rosemary, thyme, etc then have fun with those too!⁠

Find out how I make my bone broth (aka stock) in a slow cooker and then store it in ice cube trays in the freezer (because this mama doesn't have time to bother with canning!!)⁠

I'm EXPERIMENTING again! As I've told you guys in a previous post, I am doing less new blog posts on eatordrink.net (trying to keep it to 1-2/month). And honestly, it's been really nice. Having some of that pressure off to constantly push out new content has actually given me a greater desire to experiment.⁠

For this LOADED muffin recipe, I was experimenting with a blend of SORGHUM and MILLET 👇🏻⁠
Here's how to make them 🥣⁠
--Whisk the following wet ingredients together:⁠
🔹1 cup milk of choice⁠
🔹1 teaspoon apple cider vinegar⁠
🔹1/2 cup coconut sugar⁠
🔹2 tablespoons cane sugar⁠
🔹1/4 cup + 2 tablespoons oil of choice⁠
🔹1 teaspoon vanilla extract⁠
--Whisk the following dry ingredients together:⁠
🔹1 1/2 cup + 2 tablespoons sorghum flour⁠
🔹1/4 cup millet flour⁠
🔹1/2 cup tapioca starch⁠
🔹2 tablespoon ground flax⁠
🔹cinnamon (to your heart's desire)⁠
🔹pinch of salt⁠
--Mix wet into the dry and then add in some mix ins:⁠
🔹1 cup blueberries⁠
🔹3 tablespoons chocolate chips⁠
🔹3 tablespoons pumpkin seeds⁠
--Bake at 375°F for 20-25 mins⁠

When do you go grocery shopping? 🛒 Every few days, only on Saturdays, or once a month? Honestly, it can vary for me but when I do plan my meals for a month and stock up it feels so good! We save SOO much money by planning AND avoiding impulse buys. Plus I don't have to shop as much (which is nice since Ivy's getting sick of grocery shopping lately).⁠

Who loves @traderjoes chicken sausage? It’s so good! Here I baked some of the sundried tomato chicken sausage with some of their frozen cauliflower gnocchi. Just bake at 425f until gnocchi get golden. Make sure to cover your pan with parchment paper so they don’t stick 😉

Here’s how I made the sauce 👇🏻
(No I don’t have exact measurements this time 🙈)
Blend tomatoes, garlic, olive oil, toasted pumpkin seeds, salt, pepper, rosemary, Italian seasoning, chili powder, and a tiny bit of apple cider vinegar. Once smooth simmer in a pot for about 5-10 minutes to warm up and deepen flavors.

Here's how to make them 👇🏻⁠
Ingredients⁠
-2 cups of my gluten free self-rising flour blend*recipe on the blog just use the search bar⁠
-1 teaspoon cinnamon⁠
-1 pinch of salt⁠
-1 1/4 cup almond milk - can be replaced with any milk⁠
-1/2 cup melted dairy free butter - or regular butter⁠
-1 tablespoon dark brown sugar⁠
-1 tablespoon ground flax seeds⁠
-3 small apples peeled and chopped small⁠
Directions⁠
-Mix your flour, cinnamon, and salt in a large bowl. In a medium-sized bowl mix your almond milk, butter, brown sugar, and flax seeds.⁠
-Make a well in the center of your dry ingredients and pour in your wet ingredients. Mix just until combined. Add in your chopped apples and mix again just to combine.⁠
-Cook in a preheated greased waffle maker for about 7-10 minutes or until golden.⁠

Is anyone else thinking about what to make for dinner this early? 😅 Well this is it!! I just launched this recipe on my blog and if I do say so myself… it’s AMAZING!

This is a healthy and EASY one-pan dinner loaded with flavor 👇🏻
✨ I used @traderjoes sweet Italian chicken sausage for an easy and flavorful meat
✨ I also used @traderjoes frozen cauliflower gnocchi. You literally just add the frozen gnocchi right into the pan with the rest of the ingredients and it’ll cook right up! SO EASY!
✨ Everything is drenched in a CREAMY #dairyfree coconut milk sauce that has sooo much flavor!

This meal can be made in 30 mins or less and only requires 10 ingredients (including salt and pepper which I know you already have on hand 😉)

Hey! Where’s Eat or Drink?! I’ve been a little MIA from Instagram and haven’t made any new blog posts for like 3 weeks.

August has been BUSY!
.
Ready for a quick recap? 👇🏻
✨The biggest thing going on is ANOTHER MOVE! When we moved to Portland, Maine a couple months ago we moved into the second floor of a split level apartment house. Well 2 weeks ago we moved to the FIRST FLOOR of the same house and it is SUCH a blessing! So much more space 😍 Even though it’s just one floor down, there’s still so much unpacking and organizing to do 😅
✨ I also had a week back in NY visiting my family before we moved which was so fun! But there was so much to do when I got back for moving.
✨Toby got fixed last week so he’s been needing some extra love and care. 🐾
✨Ivy got bit by a cat on Friday and it puffed up like a balloon, we went to urgent care, we’re treating it like an infection because it probably was infected. And thank God the swelling is going down and it almost looks normal now👶🏼
✨Trevor started a new job last week, YAY!
✨Little Ivy is also at a very busy phase of life and learning so many new things (like how to go 💩 on the potty) which is awesome and SO fun but makes it hard to get much done around the house while she’s awake.
.
So yes a busy August but praise the Lord because it’s all been such a blessing (I guess except the cat bit… I could have done without that 😹). We are still so happy to be living in Portland, Maine and it already has been feeling like home. Being part of the new church in Portland is such a gift from God and the friendships we are making are so special.
.
✨So what does this all mean for Eat or Drink?✨
Until we’re in a less busy season of life, I’ll just be doing 2-3 new blog posts a month. It’ll give me more time to get our new home organized, give Ivy the focus she deserves, and I can just be more open and available to whatever the Lord wants me to do.
