Gluten Free Sugar Cookie Waffles

These waffles are sweet and buttery. They are such a treat for any weekend. You'd be shocked that they're gluten free and vegan.

Ingredients

  • 1 cup almond milk
  • 1/2 cup sugar
  • 2 1/2 tablespoons Ener-G egg replacer
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1/2 cup + 2 tablespoons oat flour
  • 1/2 cup + 2 tablespoons superfine brown rice flour
  • 1 1/4 cup tapioca starch/flour
  • 1 teaspoon xanthan gum
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil
  • 1/2 cup cold dairy free butter

Instructions

  • Preheat your waffle maker and spray it with grease.
  • Whisk together your almond milk, sugar, Ener-G egg replacer, apple cider vinegar, and vanilla.
  • Place your oat flour, rice flour, tapioca starch, xanthan gum, baking powder and salt in the bowl of your stand mixer. Turn onto low and then make your way up to medium to ensure all dry ingredients are mixed well without any clumps.
  • Remove your chilled shortening and margarine from the fridge and add tablespoon-sized chunks into your stand mixer while your mixer is running on low. Turn mixer onto medium-low until shortening and margarine are broken down into pearl-sized pieces.
  • Add your liquids and mix on medium-low until combined. Do not over-mix.
  • Cook in your waffle maker according to your waffle maker's instructions.
  • Enjoy as is or top with chocolate sauce! To make the chocolate sauce - melt a handful of chocolate chips with a small amount of coconut oil and a small amount of dairy free milk.
