Gluten Free Avocado Brownies

These chewy gooey avocado brownies are not only delicious but good for you too! The avocado adds such a moist texture that is sometimes lacking in gluten free brownies. Plus the avocado adds some great nutrients that will you make you feel better about eating too many brownies.

Ingredients

  • Cooking spray -for greasing baking dish
  • 1 ¼ cups Rolled Oats
  • 2 tablespoon Cornstarch
  • 1 teaspoons Baking Soda
  • ½ cup Cocoa Powder
  • ½ cup Almond Milk
  • 1 Small Avocado
  • ½ cup Maple Syrup
  • ½ cup Chocolate Chips - plus some extra for garnish

Instructions

  • Lightly grease a baking dish and preheat the oven to 350‎°F. I used a small baking dish that was 7”x 5”x 2” for thicker gooey brownies.
  • Blend the rolled oats in a blender until it has the texture of flour. Transfer the “oat flour” into a large bowl along with the baking soda, cocoa powder, and cornstarch. Mix well.
  • Blend the avocado, almond milk, and maple syrup in a blender until smooth.
  • Pour the wet ingredients into the dry ingredients and stir. Incorporate the chocolate chips. Stir all ingredients together until well combined.
  • Add your brownie batter into the baking dish and sprinkle the top with the extra garnish chocolate chips.
  • Bake for about 20-30 minutes until fully cooked. Depending on your baking dish size it may take more or less time. You can test to see if they are cooked through by sticking a toothpick in them, if it comes out clean then it’s done!
  • Let the brownies cool for 10 minutes before cutting and serving.
