Gluten Free Avocado Brownies
These chewy gooey avocado brownies are not only delicious but good for you too! The avocado adds such a moist texture that is sometimes lacking in gluten free brownies. Plus the avocado adds some great nutrients that will you make you feel better about eating too many brownies.
- Cooking spray -for greasing baking dish
- 1 ¼ cups Rolled Oats
- 2 tablespoon Cornstarch
- 1 teaspoons Baking Soda
- ½ cup Cocoa Powder
- ½ cup Almond Milk
- 1 Small Avocado
- ½ cup Maple Syrup
- ½ cup Chocolate Chips - plus some extra for garnish
Lightly grease a baking dish and preheat the oven to 350°F. I used a small baking dish that was 7”x 5”x 2” for thicker gooey brownies.
Blend the rolled oats in a blender until it has the texture of flour. Transfer the “oat flour” into a large bowl along with the baking soda, cocoa powder, and cornstarch. Mix well.
Blend the avocado, almond milk, and maple syrup in a blender until smooth.
Pour the wet ingredients into the dry ingredients and stir. Incorporate the chocolate chips. Stir all ingredients together until well combined.
Add your brownie batter into the baking dish and sprinkle the top with the extra garnish chocolate chips.
Bake for about 20-30 minutes until fully cooked. Depending on your baking dish size it may take more or less time. You can test to see if they are cooked through by sticking a toothpick in them, if it comes out clean then it’s done!
Let the brownies cool for 10 minutes before cutting and serving.
