Egg Free French Toast
You would swear this Egg Free French Toast was made with real egg. Instead, the bread is soaked in a batter made with garbanzo bean flour, coconut flour, and other tasty ingredients. It has an egg-like taste and texture but is completely egg free and vegan. Here I'm using gluten free bread, but you can use any bread you choose.

- 8 slices bread of choice - approximately 8 slices
- 1/2 cup garbanzo bean flour
- 1/4 cup coconut flour
- 1 1/4 cup water
- 1/2 cup dairy free milk
- 1 tablespoon cane sugar
- 1 teaspoon vanilla
- 1 teaspoon cinnamon or pumpkin pie spice
- 1-2 tablespoons margarine or butter
Whisk together garbanzo bean flour, coconut flour, water, cane sugar, vanilla, and cinnamon in a large flat bowl.
Soak your bread in the egg-free batter for about 5 minutes. Make sure your bread is completely submerged in the batter while soaking. You may need to set a spoon on top to make sure the bread goes under. Also, depending on the size of your bowl you may need to do your bread in batches. See note in the blog post about soak time.
Preheat a pan on medium and grease with about a tablespoon of margarine or butter. Cook the soaked bread on medium for about 3-4 mins on each side. Make sure the heat doesn’t get too hot, you want golden brown, not black. Depending on your burner you may need to turn the heat down to medium-low.
