Gluten Free Peach Cobbler (Made with Oat Flour)

This is a somewhat healthy peach cobbler made from a combination of oat flour and superfine brown rice flour. It's so easy to make and can be adapted so you can use ingredients you have on hand. It's gluten free, soy free, egg free, and has the option to be made with dairy free or vegan butter.

Ingredients

Peaches

  • 2 pounds peaches
  • 1/4 cup coconut sugar - If you like really sweet desserts you can double this amount
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vinegar or lemon juice
  • 2 teaspoons gluten free oat flour

Cobbler Topping

  • 1 cup gluten free oat flour
  • 1 cup superfine brown rice flour
  • 1/4 cup cane sugar
  • 1/2 cup coconut sugar
  • 2 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 1 pinch of salt
  • 12 tablespoons cold dairy free butter or regular butter - cut into small pieces
  • 1/2 cup boiling water

For Sprinkling on Top

  • 3 tablespoons cane sugar - If you like very sweet desserts you can double this amount

Instructions

  • Preheat the oven to 400°F
  • In a large bowl combine chopped peaches and all other peaches ingredients. Mix well.
  • Pour the peaches into a 2 quart baking dish and bake in your preheated oven for 10 minutes. The peaches will start baking while you prepare the rest of your ingredients.
  • While the peaches are baking prepare the cobbler topping in another large bowl. Combine the flours, sugars, xanthan gum, baking powder and salt. Whisk well until combined.
    Then cut in your dairy free butter using your hands or a pastry cutter until there are pea-sized pebbles. See the picture in the blog post for the desired texture.
    Stir in the boiling water until combined.
  • Remove the peaches from the oven and spoon on your cobbler topping. Gently spread down with back of your spoon.
  • Sprinkle the cobbler with your sugar topping. Place a baking sheet on the bottom rack of your oven just in case the cobbler drips. Place your baking dish back in the oven on the rack above the baking sheet for about 30 minutes.
  • Let cool for about 10 minutes before enjoying. It goes great with vanilla dairy free or regular ice cream!
